ENGLISH VERSION 

Ingredients

  • 2 medium boiled potatoes
  • 2 tbsp. corn flour
  • 2 tbsp. bread crumbs
  • Salt
  • Oil for frying

Method 

  1. Mash the potatoes
  2. Add corn flour, bread crumbs and salt
  3. Mix well
  4. Mashed potatoes shouldn’t be sticky,  if so put in the fridge for about 15 to 30 minutes
  5. Put a plastic wrap on your work surface and place the potato dough on it, and place another plastic wrap on top of the potato dough
  6. Use a rolling pin to roll between the plastic wraps to about 1/4 inch
  7. Use any cookie cutter to make  the shape
  8. Use a straw or lolly stick to make the eyes and use any round shaped spoon to make a nice smile 🙂
  9. Fry in a medium hot oil for about 4-5 minutes or until both sides are done
  10. Remove and enjoy with kids.

English version 

Ingredients

  • Half kg plain flour
  • 1 cup water
  • 3 teaspoons yeast
  • Salt
  • 1 tablespoons sugar
  • 4 tbsp unsalted butter
  • Cold milk  (for kneading)
  • 190 g unsalted butter (13tbsp.+ 1tsp)
  • 1 egg

Method 

  1. In a small bowl put water add yeast, sugar and salt, mix and put aside
  2. In a kneading bowl add flour and 4 tbsp of butter, mix well
  3. Then add yeast mixture, mix a little bit more
  4. Start adding cold milk until the dough is formed
  5. Knead until soft
  6. Wrap the dough in a plastic foel and refrigerate overnight
  7. Place the remaining butter (190g) in a zip bag or any triangle plastic bag ( 9×7 inch) and use a rolling pin to roll until the butter fit in the bag, refrigerate overnight
  8. Next day,  take both the dough and butter out from the refregirater and start rolling the dough on a floured work surface about 17×8-inch
  9. Place the cold butter on top and between (the butter should be cold and a little bit hard) fold and align 2 sides of the dough on top of the butter so that they are even
  10. Sprinkle some flour on your work surface roll the dough and fold for the second time
  11. Repeat the process for the 3rd time
  12. Sprinkle some flour on your work surface place the dough and sprinkle some flour on top, roll and fold for the forth and last time,  this time roll about 30×8 inch or divide the dough into 2 pieces and roll each about 15×8 inch
  13. Cut triangles (to make 10-12 )croissants  and each triangle make  a small slit in the middle of the base  and fold to shape by rolling from the base up
  14. Place them in a baking trey and brush some egg on top
  15. Bake at 200c for 15 to 20 minutes or until golden brown
  16. And they are ready to go

INGREDIENTS

DOUGH
1 1/2 white flour
2 TBSP cooking oil
Salt to taste
1 tsp sugar
Water 3/4

PIZZA SAUCE
1 tomato (medium size) or 5 cherry tomatoes
Capsicum
1 medium carrot
Garlic 1 clove
Ketchup 4-5 tbsp.

TOPPING
Onion
Tomatoes
Capsicum
Cheddar and mozzarella cheese
Cooked chicken
Black olives

pizza pan 12 inch (30 cm)

  1. in a kneading bowl add warm water and yeast, mix a little bit
  2. add salt, sugar and oil
  3. start adding flour and knead until soft ( the dough will be very sticky and that’s ok)

place the dough in an oiled bowl, cover and let it rise for 10 to 15 mins or until almost doubled in size

PIZZA SAUCE

in a blender put 1 tomato (medium size) or 5 cherry tomatoes, capsicum, 1 medium carrot, garlic 1 clove, ketchup 4-5 tbsp. blend until paste

  1. use your hands and spread the dough onto pizza pan
  2. cover with sauce (pizza sauce) followed by cheese
  3. start adding toppings , chicken, cheese again and finish with black olives
  4. bake at 200c for 20-25 minutes

INGREDIENTS

1 and 1/2 cup full fat milk powder

1 and 1/4 cup sugar

1 and 1/2 cup water

1 tbsp vanilla essence

1 tbsp food colour (orange)

2 tbsp cooking oil

METHOD

  1. In  pot or pan put water and sugar, bring that to boil
  • After 8 to 10 mins sugar will start produce some heavy bubbles,  add food colour, vanilla essence and oil  ,stir

  • Wait for another 3 to 5 mins , check the syrup if it is ready  ( tap the sugar syrup with a forefinger , then touch your thumb with your forefinger , pull them apart gently and the syrup should form a string)

    4. Now add milk powder,  give a quick and good mix for another 1 minute or until the mixture is well thickened

    1. Apply some oil on your work surface,  place the mixture on it ( you can use a spoon or rolling pin to give it a flat shape , wait until completely cool before cutting in to pieces.

    2 tbsp. bread crumbs

    coriander leaves(chopped)

    1 egg yolk

    1 tsp chilli flakes/powder

    1 tbsp. cumin powder

    1 lime /lemon juice

    METHOD

    1. in a bowl put all the ingredients
    2. give a good mix
    3. take 2 tbsp. of fish mixture, make a ball  shape and then flatten the ball ( you will get 6-7balls)
    4. shallow fry
    5. when the first side is done flip the other one , fry until brown and the remove. enjoy with ketchup,chilli sauce or any sauce of your choice.

    INGREDIENTS

    4 cups all purpose flour

    1 cup coconut milk

    1 egg (option)

    salt

    1 tbsp. sugar

    2 tbsp. cooking oil

    1/4 cup water

    METHOD

    1. mix all the ingredients together except water, mix for one minute by using hands or mixer
    2. add 1/4 cup of water and knead until soft , the more you knead the dough the soft the softer the chapattis will be
    3. if the dough is too sticky add some flour
    4. place the dough on a work surface , divide in to 5 equal parts, shape each part in to a ball
    5. roll each dough into a circular shape add 1 tbsp. of oil on top and start folding and make a coil shape
    6. repeat with the other 4 balls, let them rest for 15 minutes or more
    7. heat the pan, roll your chapatti into round shape, place on a hot pan and cook on a medium heat, when the first side is done flip the other one cook for 30 seconds, add 1 or 2 tbsp. of cooking oil and cook until you get a nice colour

    2. Anza kutia unga kwenye bakuli la kukandia lenye mchanganyiko wa hamira, mpaka donge likichanganyika ukande unga

    4. Haakikisha unga ni mlaini na haugandi kwenye vidole

    1. Pakaza bakuli mafuta uweke unga ufunike mpaka uumuke kiasi au mara mbili yake

  • Teleka mafuta yakipata moto choma kwa moto wa kiasi , ukiwiva upande 1 geuza wa pile mpaka yapige flour  ya light brown na yatoe

    INGREDIENTS

    Cardamom powder 1 tablespoon

    Custard powder 3 tablespoon

    1 egg

    White sugar 4 tablespoon

    Cooking oil 1 tablespoon

    METHOD

    1.In a kneading  bowl pour coconut milk and dried yeast, mix a little bit then add cardamom powder, cooking oil, sugar and egg ,mix well

    1. In a separate bowl , mix flour and custard powder
  • Start adding flour in a kneading bowl until the dough is formed,  knead

  • Make sure the dough is soft and doesn’t stick to your fingers

  • In a empty bowl grease some oil and leave the dough to rise

  • 6  Divide in to 4 equal small doughs and make them round

    1. Dust a flour on your work surface,  roll each dough and cut into 4 quarters
  • Let them rise again for few minutes

  • Heat the oil when hot fry in a medium heat until light brown both sides then remove

    Arki ya vanilla kijiko 1 cha chai

    Rangi ya orange kidogo(si lazima)

    Siagi kijiko 1 cha chakula

    Mafuta kwa ajili ya kuchomea

    Sukari nusu kikombe au zaidi (kwa ajili ya kuweka juu)
    MATAYARISHO

    1. Tia maziwa ya uvugu vugu kwenye bakuli ,pamoja na sukari kijko 1,chumvi,hamira,yai,arki na rangi ya orange
    2. Koroga vizuri wacha kwa dakika 2 hadi 3, na ufunue ukoroge tena

    1. Tia unga wa ngano kidogo kidogo huku unachanganya mpaka unamaliza

    4.tia siagi kijiko 1 cha chakula ,changanya ,unga utakua unanyata(kushikana na mikono) ila   ukande kwa mkono au mixer mpaka unga uwe mlaini( pakaza mafuta mikono yako ili usigandie kwenye mikono)

    1. Utie unga ulioukanda kwenye bakuli uliopaka mafuta ufunike wacha uumuke mara mbili zaidi yake

    6.ukiumuka utoe uchanganye , pakaza unga sehem ya kukandia ,weka donge la unga na ulitie unga juu yake

    1. Sukuma unga kwa kutumia kifimbo cha kusukumia chapati, unga usiwe mwembamba sana wala mnene sana ( inch 10-12 ) kulingana na unene utakaopenda

    8.tumia chombo chochote cha kukatia donut , donat cutter au hata glass na kifuniko

    9. Pakaza unga trey au sehem ziweke  ziumuke tena kama dakika 5 au 10

    1. Teleka mafuta yapate kiasi na uchome donuts zako pande zote mbili ziwe na rangi ya yellow ya kukoza na uzitoe ,ziweke kwenye tishu zijichuje mafuta

    11. Wacha zipoe

    1. Zizungushie sukari ya kawaida nyeupe

    INGREDIENTS

    2 cups all purpose flour

    1 cup whole milk (warm)

    1 tablespoon granulated sugar

    Half of teaspoon salt

    1 egg

    1 tablespoon dried yeast

    1 teaspoon vanilla essence

    A pinch of orange food colour (option)

    1 tablespoon butter

    Oil for frying

    Sugar for coating

    1.Put warm milk in a bowl then add 1 tbsp of sugar, salt,yeast,vanilla essence

    1. Mix well and cover for 2 to 3 mins , mix again for few seconds

     

    • Add flour to the mixture and combine together
    • Add butter and start kneading, the dough will be very sticky  , use a mixer instead or apply some cooking oil to your hands so that it doesn’t stick to your fingers. Knead until soft

     

    1. Transfer the dough to an oiled bowl,cover and let it rise until doubled in size
    1. Dust some flour in your work surface , place the dough and put some flour in it

     

    • Using a rolling pin,  roll your dough  into 10 to 12 inch circle ,depend on the size you want
    • Cut the donut shapes using your preferred doughnuts cutter

     

    9.flour the surface or trey , place the doughnuts and let them rise again  for 5 to 10 mins

    1. Heat the oil in a medium heat, when the oil is hot fry the doughnuts both sides , until golden yellow , remove the doughnuts and drain on a paper towel

     

    • Wait until completely cool
    • Coat them with some sugar

     

    Enjoy! with tea or juice

    MATAYARISHO 

    1. Kwenye bakuli weka siagi,maziwa,viini ya mayai , baking powder, custard powder, chumvi,arki na sukari

    2.Saga kwa kutumia mwiko,mchapo au machine ya kusagia kwa muda wa dakika 3 hadi 5

    1. Anza kuweka unga wa ngano huku unachanganya 

    1. Unga ukichanganyika ukawa donge , likande kwa dakika 2 hadi 3

    1. Lifunike,liweke  sehem lijivute kwa dakika 7 hadi 10 

     6.pakaza mafuta trey yako 

    1. Baada ya dakika 7 hadi 10 , lisukume kwa kutumia kifimbo cha chapati  mpaka uwe size , isiwe nyembamba sana 

     8. Kata kwa kutumia kifaa chochote cha kukatia vileja 

    1. Vipange kwenye trey , vipakaze yai juu na ufuta 

    10 . Vichome kwa oven moto 180°c kwa dakika 10 hadi 15 au mpaka uone vimewiva na kubadilika rangi,  vitoe (manjano ilokoza)

    *Unaweza kutumia mkaa pia kuokea.

    INGREDIENTS 

    6 tablespoons butter, 1/3 cup

    Salt to taste

    2 egg yolks 

    1 teaspoon baking powder 

    1 tablespoon custard power 

    Whole milk 4 tablespoons 
      
    1 cup plain flour 

    1 egg 

    Essence ( i used vanilla and orange)  teaspoon each 

    Sesame seeds for garnishing (option) 

    1 tablespoon granulated sugar (option) 

    METHOD 

    1. In a bowl, put butter,milk,eggyolks,baking powder, custard powder, salt,essence and sugar
    2. Mix by using a wooden spoon, wisk or mixer machine for 3 to 5 mins 

    3. After that, start adding flour while continuing mixing 

    4. When dough has formed,  knead for 2 to 3 mins

    5.cover and let it rest for 7 to 10 mins

    1. Grease a baking tray 
  • After 7-10 mins, roll up your dough using a rolling pin until the dough is the right width and thickness (not too thick) 

  • Cut the cookies using any cutter 

  • Place them in a greased baking tray , brush some egg and sesame seeds on top 

  • Bake at 180°c oven temperature for 10-15 mins or until you get a perfect golden yellow

    MATAYARISHO 

    1. Kwenye pan yamoto tia sukari na maziwa

    2.koroga kwa sekunde 30 au dkk 1 

    3.wacha yachemke kwa moto wa kiasi

    4.uwe unakoroga mara kwa mara (kila baada sekunde 30 au dakika 1 ili maziwa yasigande au kuunguwa 

    5.wacha yachemke kwa moto wa kiasi mpaka yawe mazito yanavyotakikana kwa muda wa dakika 20 hadi 25 


    6.zima moto wacha yapoe 

    7.yapo tayari kutumiwa au yahifanyi kwenye kikopo cha mfuniko

    it is very easy to make condensed milk at home with just 2 ingredients 
    2 cups full fat milk 

    1 cup granulated white sugar 

    METHOD 

    1. In a hot pan ,pour milk and sugar 
    2. stir for 30 seconds to 1 min

    3.boil on a medium heat 

    4.keep stirring every after 30 senconds to 1 min so that it doesn’t stick to the pan 

    1. Boil until thickened to desired consistency 
  • Turn of the heat and let it cool

  • Ready to use or store in a airtight container

    MAHITAJI

    Tambi nyembamba mfuko 1 (200 g)

    Samli vijiko 3 vya chakula

    Maziwa mazito nusu kikopo (200g)

    Zabibu kavu nusu kikombe

    Arki ya vanilla kjk 1 cha chai
    MATAYARISHO

    1. Vunja vunja tambi ziwe ndogo ndogo sana

    1. Teleka sufuria tia samli ikipata moto tia tambi

    3.koroga uwe unazivunja vunja kwa mwiko mpaka ziwe brown kiasi (dakika 3-5) kwa moto wa kiasi

    1. Tia maziwa mazito na zabibu kavu ,changanya

    5.tia arki ,changanya kwa sekunde 30 au dkk 1 ,zima jiko

    1. Tumia  vikombe vya kahawa au kitu chochote kutolea shape, vipake mafuta, tia tambi zako zikiwa bado zamoto kikombe karibia kijae ,didimiza kwa kutumia kijiko weka pembeni

    7.malizia zilobaki

    8.baada ya dakika 1 au 2 vitoe taratibu, tumia ujiti kuanzia kutoa ukiona vinafanga tabu kutoka.

    INGREDIENTS

    Roasted vermicelli 1 packet /200g

    Ghee 3 tbsp

    Condensed milk 100g

    Red or black raisins 1/2 cup

    Vanilla essence 1 tsp

    METHOD

    1.Break the roasted vermicelli into smaller pieces

    1. Heat the ghee , add roasted vermicelli
  • In a medium heat, keep breaking the vermicelli using a wooden spoon ,while mixing until light brown

  • Add condensed milk and raisins, mix well

  • Add 1 tsp of vanilla essence, mix for 30 secs to 1 minute,  switch off the heat.

  • Use a small coffee cups or any round shaped mould to get the perfect shape (see the pictures above) use a spoon, put some cooked roasted vermicelli  almost full while still hot use  back of the spoon to tighten the balls , keep aside

  • Repeat the process

  • After 1 or 2 mins remove them out of the cups/moulds . If they are not coming out easily, use a wooden stick

  • Serve

  • Enjoy.

    Soya sauce ya kukoza vjk 3 vya kula(si lazima)

    Maji nusu kikombe
    1. Tia mafuta kwenye pan kaanga vitunguu vichanga

    2 tia kitunguu saum na tangawizi mbichi,

    3.tia pilipili hoho na carrot ulizozikata kata nyembamba na refu,funika wacha ziwive kiasi (dkk 2)

    4.tia tomato zilizosagwa au kukatwa katwa na chumvi ,funika wacha dakika 2-3

    5.tia samaki wa kukaanga

    6.tia bizari nyembamba,pilipili manga,curry powder, spice ya samaki,bizari ya mchuzi, soya sauce,pilipili, vitunguu vichanga,ndimu au limau na maji.

    1. Koroga wacha kwa dakika nyengine 3-5 kwa moto wa kiasi ,mpaka ikauke kiasi ,

    8.onja chumvi kama ipo sawa epua na

    INGREDIENTS

    Fried fish 3 pieces

    Chopped spring onion 1 cup

    Cooking oil 3-4 tbsp

    Ginger+garlic 1 tbsp

    Mixed peppers 3 colours (cut into lines)

    1 carrot (cut into lines)

    2 fresh tomatoes

    Salt to taste

    Cumin powder + black pepper 1 tbsp

    Curry powder 1 tbsp

    Fish seasoning 1 tbsp

    Cumin powder 1 tsp

    Chilli paste or fresh chilli 1 tbsp

    Dark soya sauce 3 tbsp (option)

    1/2cup water

    1.Put oil in a pan, fry spring onion

    2.add ginger+garlic paste

    3.add mixed peppers and carrots ,let it cook for 2 mins

    4.add chopped or blended tomatoes and salt, cover let it cook for 2 to 3 mins

    5.add fried fish

    6.add cumin powder+black pepper, curry powder, fish seasoning, tumeric powder, chilli paste or chopped fresh chilli,dark soya sauce,spring onion,lemon or lime juice and water

    7.stir, let it cook in a medium heat for another 3 to 5 mins or until thickened

    8.taste to adjust the salt
