Kosha mchele utie maji weka pembeni ,kwa dakika 10 hadi nusu saa ,umwage maji  

Chemsha maji kwenye sufuria yakichemma tia mchele koroga Wacha  mpaka uwive kiasi (usiwe mlaini sana na wala usiwe mgumu sana) mwaga maji weka pembeni ,au uchemshe na maji kiasi yakikauka na mchele uwe umewiva kiasi haina haja ya kumwaga maji , Kama mchele umewiva kuna maji yamebaki chuja maji kwa chujio na uweke pembeni (wali)

Teleka sufuria kwenye moto tia mafuta kiasi ya kukaangia yatoshe pamoja na wali ,kaanga kitunguu maji mpaka kiwe brown, tia mchanganyikowa wa mboga mboga , kitunguu saum ,tangawizi , spices na chumvi , koroga wacha mpaka karibu vinakaribia kuwiva , tia ule wali ulioupika koroga kidogo kidogo uchanganyike na mboga mboga ,funika sufuria wacha uwive kwa moto mdogo mdogo au pambia unavyopenda .

ENGLISH 

Rice 1 kg 

Mixed vegetables 3 cups (sweetcorn,greenpeas,carrot,green beans) 

Cumin power 1 tbsp

Black paper 1 tsp

Curry powder 1 tsp 

Garlic paste 1 tbsp

Cooking oil 5 tbsp or more

Salt for taste 

One large onion 

Soak rice and leave it for 10 to 30 minutes, rinse well 

In a pot ,bring the water to boil, add rice   stir well , cover the pot and let it cook until the rice is half cooked, there should not be any water left, if there is still water left in the pot and the rice is done tilt the pan and drain it using a strainer and leave it aside 

In a pot  heat the oil, add chopped onion , fry until brown , add mixed vegetables, garlic,ginger  spices and salt ,stir and leave until almost done , add cooked rice stir gently ,cover the pot and leave it  in a low heat until done.

Kwenye sufuria tia nyama ,chumvi ,kitunguu saum na tangawizi ipike kwa dakika 3 mpaka 5 ,tia bizari nyembamba ,pilipili manga ,garama masala ,giligilani ya unga ,biriyan masala ,koroga kidogo tia maji ya kutosha wacha iwive ikauke ibaki na supu nzito kama nusu kikombe ,epua weka pembeni 

Kwenye karai tia mafuta ya kutosha kaanga vitunguu mpaka viwe brown ,kaanga viazi viwive vitoe viweke pembeni 

Tia mafuta kikombe 1 na nusu kwenye sufuria tia tomato puree koroga wacha kwa dakika 1 mpaka 2 tia tomato ulizozisaga na chumvi kidogo ,funika wacha ziwive uwe unazikoroga ili zisigande kwenye sufuria  ,mpaka uone tomato imekua nzito na mafuta yamejitenga na tomato tia nyama na supu kidogo uliyobakisha pamoja na vitunguu maji na viazi ,koroga kidogo wacha ziwive pamoja mpaka mchuzi uone umekua mzito na umekua brown onja chumvi kama ipo sawa epua 

 WALI 
Mwaga maji mchele ,teleka maji ya kiasi yakichemka tia mchele koroga kidogo ufunike , uwache uchemke mpaka uwe mlaini kiasi  

Umwage maji kwa kutumia chujio/chungio na urudishe kwenye sufuria ,tia chumvi vunja vipande vya mdalasini utie pamoja na iliki nzima ,chukua mafuta yanayoelea kwenye mchuzi au uliyokaangangia vitunguu kiasi utie kwenye wali ili upate harufu nzuri,tia rangi kiasi kwa mpangilio wa matojo  ,uchanganye kidogo na ufunike uurudishe kwenye moto 

Weka moto wa kiasi mpaka unawiva vizuri makisio dakika  mpaka 20-30 kwa moto wa 180 c  utoe ,uchanganye taratibu kwa kutumia uma/fork na utakua tayari 

 LAMB BIRYAN 

Lamb meat 1 kg 

Tomato puree 5 tbsp 

Tomatoes 3 cans

Garlic paste 2 tbsp

Ginger paste 1 tbsp 

Cumin powder 1 tbsp 

Black pepper 1 tsp 

Salt 

Garam masala 1 tbsp

Corriander powder 1 tbsp

Biryan masala 1 tbsp

Onions  4-5 (large)

2 large  potatoes 

Cooking oil (sunflower)  1 and half cups

FOR RICE 

1 kg any basmati rice (layla)

Food colour (yellow & orange 

Salt

Whole cinnamon 1 stick

Whole cardamon 4 pods

       Soak rice for 20 to to 30 minutes 

In a pan put lamb meat add salt ,garlic and ginger,cover and  cook for 3 to 5 mins then add cumin, black pepper, garam masala, corriander powder, and biryan masala ,give it a good stir then add 10 to 15 cups of water ,cover and let it cook until done and almost dry, set aside (you can add 1 cup of yogurt to make it more thicker  ) 

   Put  oil in a separate pan  fry the onion until brown and crunchy ,set aside, now fry the potatoes until done, set them aside 

  In another pot put 1 and half of cooking oil  ,add   tomato puree stir and leave for 2 to 3 mins, then add  blended tomatoes and pinch of salt ,stir and cover , keep stirring so that it doesn’t stick to the pan , and let it cook until the tomato sauce is very thick or paste-like and  the oil separates from the tomatoes,

   now add the cooked lamb ,fried onions and potatoes, stir and cook for another 10 to 15 minutes or until thick and brown enough ,taste to adjust the salt .

RICE

   Drain the rice well using a sieve and bring it to boil in  hot water until almost done , use a sieve again to strain the cooked rice and put it back in a pan/pot ,add salt ,cardamom pods and cinnamon stick/s  ,now sprinkle with a liquid food colour, add the oil (use the floating oil from the top of your lamb curry to give your rice a good aroma) cover and let it cook in a low heat or put in oven at 180 for 20 to 30 minutes. 

   When done, fluff the rice gently with a fork and serve .

UNGA

Cheese iliyoparwa kikombe 1 (mozarella)

Mafuta ya kupikia kijiko 1-2 cha supu

Kwenye bakuli tia maji ya uvuguvugu vijiko 5, tia hamira weka kwa dakika 3 , baada ya hapo tia maziwa, sukari, yai  chumvi na siagi, anza kutia unga wa ngano uchanganye na ukande mpaka donge la unga liwe laini , yagawe yawe madonge 4 mpaka 6  yawache sehem iliyo na joto mpaka iumuke mara mbili zaidi   

Teleka samaki mnyambue au kama tuna wa kikopo mpike kwa dakika 1,tia mafuta na vitu vyote vilotajwa kwenye filling isipokua cheese ,mpike kwa moto wa kiasi mpaka kila kitu kiwive ,wacha apoe na changanya na cheese. 

Washa oven 180 degrees 

Chukua donge moja moja, tumia kifimbo kusukuma donge lako liwe jembamba kiasi  , weka samaki kijiko 1 cha supu, na utumie ‘lattice cutter’ au kisu kukata shape au mistari membamba

Baada ya hapo, kunja kuanzia Kwenye samaki mpaka mwisho, na uziunganishe pembe zote 2 kupata shape ya duara, (angalia picha inayoonesha steps chini)fanya ivo mpaka unamaliza zote 
Weka kwenye trey pakaa yai juu utie ufuta na habba soda na choma kwa dakika 25 mpaka 30 au mpaka viwe rangi ya brown. 

STEP BY STEP 

DOUGH 

2 cups all purpose flour 

yeast 1 tbsp
butter 1 tbsp

1 egg

1 tsp sugar

salt to taste 

1 cup or more of warm milk

Sesame seeds & black seeds  

FISH & CHEESE FILLING 

Tuna 2 cans 

1 red pepper (chopped) 

1 medium carrot (grated)

grated cheese ‘mozarella’ 1 cup

 1 tsp of black pepper

1 tsp of cumin powder

garlic 1 tsp

salt to taste 

cooking oil 1-2 tbsp

In a bowl add 5 tbsp of warm water and yeast stir and leave it for 3 minutes, then add milk, sugar, salt ,butter and egg stir well for 1 minute , start adding flour and knead  until the dough is well combined and soft, divide into 4 to 6 equally size pieces and leave somewhere warm until they have doubled in size 


Place tuna in a pan, cook for 1 minute  then add oil, carrot, red pepper, garlic, salt, cumin powder, black pepper stir and cook until everything is done leave it somewhere to cool, and then  mix with grated cheese. 

Pre heat the oven at 180 degrees 


Use a rolling pin to flatten your dough , add 1 tbsp of fish& cheese filling and use a knife to cut the lines shape or you can use a luttice cutter ,roll it untill the end and make a round shape (see step by step pictures) repeat the process until you finish all of them 

Place them in a baking tray , use a pastry brush to paint them with a light egg wash and sprinkle them with sesame seeds and black seeds  ,bake  for 25 to 30 minutes or until light brown.

Wakoshe wings watie viungo/ spices na vitu vyote ,muweke akolee kwa masaa kuanzia 3 au mroweke usiku mzima ,(unaweza kuwatia kwenye fridge)

Watie kwenye trey wachome kwa oven mpaka wawive vizuri wakauke ,wakimaliza  kama una makaa yamoto waweke /wachome kwa dakika 1 au 2  kila upande kupata harufu nzuri na wapo tayari kuliwa.
